Carob Chip Cookies (well it's based on a Chocolate recipe).
Makes 36 BiscuitsIngredients
1 1/2 C Plain FlourPinch Salt
1tspn Baking Powder
1/2tspn Bicarbonate of Soda
6Tbspn Butter or Margarine
4Tbspn Soft Light brown sugar (White Sugar)
3Tbspn Golden Syrup
1/4C Carob Chip
Method
- Preheat oven to 190oC.
- 10 mins. before cooking oil or spray the baking sheet or put glad bake on the tray.
- In a large bowl sift together plain flour, salt, baking powder and Bicarbonate of Soda.
- Cut butter or margarine into small pices and add to the flour mixture.
- Using your fingertips or a knives rub in the butter or margarine until the mixture resembles course breadcrumbs.
- Add the light brown sugar, golden syrup and carob chips. Mix together until a smooth dough forms.
- Shape the mixture into small balls and arrange on the backing sheet, leaving enough space to allow them to expand. ( These cookies do not increase in size by a great deal, but allow a little space for expansion.)
- Flatter the mxutre slightly with the fingertips or the heel of the hand.
- Bake in a preheated overn for 12-15 mins or until golden brown and cooked through.
- Allow to cool slightly then transger the biscuits on to a wire rack to cool.
- Serve when cold or otherwise store in an airtight tin.
